Warm up to the flavors of fall with two beloved Mexican comfort desserts that have long been enjoyed during family gatherings and seasonal celebrations. In this hands-on class, participants will prepare Calabaza en Tacha, a traditional candied pumpkin dessert made with fresh pumpkin slowly simmered in piloncillo (unrefined cane sugar) and cinnamon, alongside Champurrado, a rich, velvety Mexican hot chocolate thickened with masa and infused with authentic Mexican chocolate and warming spices. 
 
Throughout the class, you'll discover the history and cultural significance of these cherished recipes while learning the traditional techniques and ingredients that create their distinctive flavors. Whether you're new to Mexican cuisine or looking to expand your culinary repertoire, this class offers an inviting introduction to two timeless recipes that celebrate the warmth and hospitality of the season. 

Participants will: 

  • Prepare traditional Calabaza en Tacha (Candied Pumpkin) from scratch. 
  • Learn to make authentic Champurrado, a comforting Mexican chocolate beverage. 
  • Explore traditional ingredients such as piloncillo, masa, cinnamon, and Mexican chocolate. 
  • Discover the cultural traditions and seasonal celebrations where these dishes are commonly enjoyed. 
  • Gain practical cooking techniques and tips for recreating these recipes at home. 
  • Enjoy samples during class and take home the recipes to share with family and friends. 

No prior cooking experience is necessary. All ingredients, aprons for participants to use, recipes, and tastings are included.
